Ice wine, enjoyed as a dessert wine, is made from grapes that have been frozen while still on the vine. The sugars do not freeze, but the water does, resulting in a smaller amount of more concentrated, very sweet wine. Finger Lakes Wine Country, because it is a cool climate wine region, does have its share of ice wine. We're only one of the few regions in the world able to produce classically made ice wine where the grapes are allowed to freeze on the vine.
